Busy Day Banana Cake
1 1/3 cups unbleached flour
½ cup sugar
1 ½ teaspoons baking powder
¼ teaspoon ground nutmeg
2/3 cup mashed very ripe banana (about 1- ½
large)
1/3 cup maple syrup
3 tablespoons fat-free egg substitute
Icing:
1 cup nonfat ricotta cheese
2 tablespoons maple syrup
½ teaspoon vanilla extract
1. Combine flour, sugar, baking
powder, and nutmeg, and stir to mix well. Add the
remaining ingredients, and stir to mix.
2. Coat an 8 inch square pan with nonstick cooking
spray. Spread the batter evenly in the pan, and
bake at 325º for about 30 minutes, or just
until a wooden toothpick inserted in the center
of the cake comes out clean. Cool the cake to room
temp.
3. To make the icing, place the ricotta cheese,
maple syrup and vanilla extract in a food processor
and process until smooth. Spread the icing evenly
over the cake, cut into squares, and serve immediately
or refrigerate.
